Berkeley's polypore (Bondarzewia berkeleyi)

Berkeley's polypore grows on oaks and other hardwood trees.

The fan shaped caps grow in overlapping clumps from the bases of oak trees, each capable of growing to 10 in. diameter. They are various shades of white to pale grey, cream, beige or yellow. The outer edges that cut easily with a knife are quite tender. Bondarzewia berkeleyi has little taste, it can be used to take on other flavours in dishes, much like tofu, and can be used as a meat substitute.
